Healthy Recipe: Quick Chocolate Brownies for 2

    A misconception a lot of people have about eating healthy is that they cannot eat dessert. That is simply not true! I am a full believer in nourishing the body so that we can experience all of the benefits of healthy eating and enjoy life to the fullest, but without dessert, life is not being enjoyed to the fullest. Eating healthy is all about moderation, and a wise dessert choice assures that you’re nourishing your body while enjoying your food choices. Most nights, I enjoy some type of dessert after dinner. It may be something light, like a sliced apple sprinkled with cinnamon, or something a bit more decadent, like these brownies. They taste better than the boxed-mix from the store and they take less than 10 minutes from start to finish (including washing all the dishes!) 
 
– 1 5-6 inch banana, mashed
– 2 Tbsp. Unsweetened Cocoa powder
– 4 Tbsp. Whole Wheat Flour
– 2 Tbsp. Nonfat plain yogurt 
– 1 Tbsp. Cane Syrup, optional
– ½ tsp. Olive Oil
– Stuffings of choice
 
    In a regular sized bowl, mash banana with a fork and add in all other ingredients, except for stuffings. I usually add the dry and then the wet, just so I can use the same Tbsp. measuring spoon without having to rinse it off. Mix slowly to combine all ingredients until the batter is even and there is no loose flour or chocolate. Take 2 ramekins or coffee mugs and distribute an even amount of batter into each, but reserve about 2 Tbsp. of batter. For the fun part, choose your mix-ins: a Tbsp. of chocolate chips, a ½ Tbsp. nut butter of choice, a few walnuts, or anything else that you may desire! Then, cover the mix-ins with remaining batter, which should be about 1 Tbsp. on each brownie. Microwave brownies one by one for 2-3 minutes until brownie poofs and chocolate nut butter may slightly bubble.  Enjoy your gooey, warm brownie right out of the microwave!
